This homemade jam is great with fresh bread!
For this recipe you will need:
- One Lemon (both the juice and the zest
- 1 cup of Honey
- 8 cups of Blueberries
- a medium/large Pot
- Knife
- Lemon Squeezer (any juicing method will do)
- 2. One cup, Measuring cups
- Rubber spatula
- Microplane
- Canning Jars
Start by rinsing the blueberries and washing the Lemon. Then add the cup of honey and eight cups of blueberries in a medium/large pot. Next zest a lemon with the microplane and combine with the juice from that lemon in the pot, mix all the ingredients together with the rubber spatula (or your mixing tool of preference). Put the pot on medium (you are looking for a soft boil). Continuously stir until 1. all of the blueberries have popped and 2. when you lift the spatula the jam coats the surface of the utensil. Then add the hot fresh jam to sterilized canning jars and proceed with your canning/shelf stabilizing process of choice. I hope you enjoy this recipe as much as we do!
